We all love pancakes on the weekend, but have you tried Dorayaki? This sweet ‘pancake sandwich’ is one of my favourite Japanese snacks and there’s no limit to how creative you can get with the fillings.
I’ve always picked up Dorayaki on the go and never considered making them myself, but luckily Wagashi Bakery has shared its secrets to creating perfect, fluffy Dorayaki at home. This family-run bakery was established in London in 1986 and is associated with the popular Tokyo patisserie, Kitaya.
It’s a pretty easy recipe, so give it a try and switch up your American brunch pancakes with matcha, adzuki bean or sesame this weekend:
How to:
Ingredients:
4 eggs
140g caster sugar
2 tablespoons of honey
160g plain flour (you can substitute 10g of this for matcha powder)
2 tablespoons of water
1 teaspoon of baking powder
1 teaspoon of vegetable oil
Method
3. Combine the dry flour mix and the wet milk mix and whisk until smooth. This is your batter. Pop batter into the fridge for 15 minutes to chill.
